One of the original breweries that was established in 1989 in Fort Collins under the old Northern Hotel in Old Town. They closed by the early 90s, but the grandson of the original brewer decided to take some of his grandfather's original recipes and opened up again in Wellington, CO. This brewery resides in an old grain silo and mill from 1922, and like their tagline they've really "tapped into History" here. Orginal wood from the ceiling, walls and down to the floor adorn this local watering hole. Most of their beers they make they try to brew with all local ingredients. For instance, the "TruVoss II" is made with malts from Trubadour Maltings and the hops from Voss Farms. From Thursday to Sunday they'll have food trucks available, and every other day "Ingrained Bakery", a local bakery down the street will supply fresh sandwiches to this brewery. |
